How do I install multiple versions of QCAD on single machine?

On macOS, each application is bundled into a single directory (an "application bundle"). This is what appears as application icon which you would typically double-click to launch. You can have multiple of these application bundles for different versions of QCAD. Simply rename them with the version in the name (e.g. "QCAD-Pro-3.26.4").
